Food culture of Aichi "Tamari" soy sauce

“Tamari” is the main type of soy sauce widely used in the Tokai region. Since the amount of soybeans used as the raw material is greater than that of wheat, tamari has a high nitrogen content, the yardstick for good flavor, with a rich flavor and taste. (Our tamari soy sauce’s total nitrogen content is 1.4 to 1.8 times that of regular koikuchi soy sauce).

When tamari soy sauce is added to a boiled or grilled dish that is heated, the soy sauce not only makes it turn a beautiful red color with a strong glaze but also brings out a dried fish flavor because the sauce has an aroma weaker than that of koikuchi soy sauce.
